At Cleaver & Co. we buy whole animals directly from the farmer to ensure the animals have been raised sustainably and without antibiotics or synthetic hormones. Animals are cut into retail cuts in the shop and we cut most items to order to make sure you get exactly what you want. Because we bring in the whole animal we do run out of some popular cuts (like Ribeye and Tenderloin) quickly, but our knowledgable butchers are available to suggest new, and equally good, cuts to try. We encourage you to call ahead to reserve these popular cuts or place a special order. We make an extensive line of house made sausages, broths, and charcuterie and render our own animal fats, such as duck fat, beef tallow, and lard. To eliminate waste and minimize our ecological impact we use as much of the animal as possible.
